A vegan walks into a seafood and steak restaurant… St. Croix edition.
Our out-of-town guests were craving the island’s fresh seafood, so of course we took them to the famous Duggan’s Reef. The menu is actually pretty tough for a vegan, but the staff is always so kind to create a bomb herbivore-friendly pasta dish for me. Big ups to my friend Maddie for making this absolute magic happen: linguine with curry sauce, eggplant, artichoke, roasted garlic (I die), red peppers, leeks, and summer squash, and I added some edamame with shichimi togarashi to these leftovers to protein-power my way through the workday.
