Chickpea Flour Omelette 🌿🐥
This flavorful, savory breakfast dish is kind to your body, with lots of protein and super-spice Turmeric, as well as kind to egg-laying hens, some of the most inhumanely treated and least understood of the world’s farmed animals. The texture is not exactly that of an egg omelette - it’s a bit more like a hearty, dense, savory pancake - but this is much tastier, in my opinion!
(Makes two “omelettes”)
-1 tsp vegan margarine
-½ c chickpea flour
-1 tbsp nutritional seasoning
-½ tsp Creole seasoning/seasoned salt of your preference (or more to taste)
-½ tsp turmeric
-¼ tsp baking soda
-½ c water
-About ½ c mix-in veggies of your choice; I used baby spinach because it cooks down nicely with the heat from the pan
-Salsa to taste (optional but good)
Whisk all ingredients (except the veggies) together to form a “batter.”
Heat the margarine in a small skillet on high heat.
Pour in half of the batter at a time. When small bubbles start to appear, add in your mix-ins. Cook for another minute, and flip. Cook until completely cooked through. Serve with love. 💛
