Specially-Made Penne Salad from Blue Water Terrace, St. Croix, US Virgin Islands.
Blue Water (or “Lori’s,” as my family calls it, referring to the kind and talented owner) does not have a vegan-friendly menu, but if you ask nicely, they’ll go above and beyond to create a mouthwatering, herbivore-friendly dish. At lunch and dinner, I usually order their Asian Noodle Salad without shrimp, but they were out yesterday, and instead made me this gorgeous concoction of fresh, local spinach, roasted red peppers, penne, chickpeas, pepitas, sunflower and sesame seeds, light soy-ginger dressing and lemon. It was so delicious that I would definitely order this if it was on the menu!
