Simple Quinoa-Veggie Stir-Fry. 🌱
This is the sort of quick, healthy dinner that I often make during the week. This stir-fry is so simple, it doesn’t really need a proper recipe written out. Just:
-Cook 1 ½ c quinoa in 2 ¾ c veggie broth (for extra flavor), and set aside.
-Heat 1 tsp peanut oil in a wok or large frying pan over high heat, and sauté one diced onion, one diced bell pepper, and lots of roughly chopped garlic (I used six cloves, but I’m a garlic maniac) until soft and fragrant.
-Then, add 2-3 other veggies - I love broccoli and zucchini - and cook, stirring often, until they’ve flushed bright green and softened.
-Add about ½ c sliced almonds and 2 tsp sesame seeds, and mix in.
-Season with soy sauce, chili flakes, and ginger (if you have it), and you’re done! For a protein bonus, add some Gardein beefless tips - mine are hiding under the quinoa! 💪🏼
