Arroz doce com leite de coco
1 xícara de arroz cru (usei arroz japonês)
2 1/2 xícaras de água
1 colher de manteiga
750 ml de leite (cerca de 3 xícaras)
1 xícara de açúcar
1 vidro pequeno de leite de coco
Canela em rama
Canela em pó para polvilhar
1) Cozinhe o arroz com manteiga e água até ficar mole, cerca de 15 minutos. Se necessário acrescente mais água.
2) Coloque o açúcar numa panela e leve ao fogo brando, vá girando a panela até ele dourar, sem escurecer muito para não alterar o sabor. Junte 1 xícara de leite e ferva até desmanchar o açúcar.
3) Junte este leite caramelizado ao arroz cozido, o leite de coco, uma rama de canela, e o restante do leite vou acrescentando aos poucos enquanto o arroz doce cozinha mais e fica cremoso. Eu só desligo o fogo quando o arroz está bem molinho. Sirva polvilhado com canela em pó.
Na crockpot:
Você pode colocar o arroz cozido ou cozinhar na própria panela elétrica, por 1 hora, checando sempre a água. Depois acrescenta o leite caramelizado e o restante dos ingredientes, deixa por 3 horas na potência média.
